Check Transmission, UL interference, RSRP/RSRQ/SINR.
No interference. SINR is above 20 dB.
Actually it is a new RAN that is being tested.
Check UL TX power or packets lost inside RAN( not over the air interface).
I have seen VoLTE calls with plenty of RTP packets lost inside RAN, not over the air interface.
Use PCAP and trace the packets number at TX and RX.
And like this you will know how many are lost.

Apart from packet loss, can there be any codec, QoS or header compression related improper configuration that may cause these issues?
You can try and disable ROHC.
Disable RLC segmentation.
Disbale TTI bundling.
